Iskender kebab’s main ingredient is the renowned gyro meat. First, we marinate the lamb meat overnight with the traditional seasonings and spices. Then, the meat is heaped on a vertical rotisserie to cook it slowly. When the top layer of gyro meat is roasted for the Iskender kebab, thin slices are carved from the gyro meat.
As Iskender kebab is served as an entrée, special pita bread is sliced and laid down on the plate as a base. Next, carefully cut thin strips of gyro meat are placed on the pita base. These two delicious layers of meat and pita are flavored with tomato sauce and melted butter. The Turkish Iskender kebab is completed with a large spoon of yogurt.
